Sunday,
November 16, 2014: Chef Paula was busy in the Gilbert Lodge Galley making Borscht. This is a Russian soup with beef stew meat, onions, beets, cabbage, carrots, tomatoes, and much more. |
The meat was boiled over low heat for two hours. Then it
was added to the vegetables that looked rather usual as it went into a pot for
45 minutes. The borscht came out red and delicious when served with a dollop of sour cream and dill sprinkled on top. |
What was the occasion? It was a birthday for close friend Karen Koltes Engen. She is surprised and holding the table place card says 39 again! Numbers sprinkled on the place mat gave the real
story. |

Yes, there was a nice warm fire going in the Grand
Fireplace at Gilbert Lodge that night as there is most nights during the
winter months. |

Karen posed with a
chocolate torte, disguised as her birthday cake. Calories don't
count at a time like this. |
